With a multicultural background and a deeply personal style, Chef François Ozanne fuses French technique, Northeastern Brazilian roots, and modern local identity. Named Ambassador of Sergipe Cuisine by the Dolmã Award, he transforms food into soulful, sophisticated experiences. As a Private Chef, François brings heart, flavor, and cultural richness to every event.

Bio

François Ozanne's name is a reflection of his culinary story. The son of a French father and a Southern Brazilian mother, he was raised in Brazil’s Northeast, where he was immersed in the local flavors from an early age. He began formal training at 15 at SENAC and entered culinary school by 16. His greatest inspiration was his paternal grandmother — a powerful influence whose cooking philosophy combined self-grown ingredients and rustic French techniques.

François later studied Restaurant Management at Le Cordon Bleu in Lima, Peru. Upon returning to Brazil, he launched his own restaurant, Alma Bistrot, served as a culinary consultant, and taught at the Instituto Gastronômico das Américas. In 2018, he was awarded the prestigious Dolmã Award and named Ambassador of Sergipe Cuisine — a recognition of his contribution to Brazilian regional gastronomy.

He has worked in respected kitchens such as Dado Bier, Sensi Osteria, and Oliva Bistrô, refining his skills in classic French cuisine, contemporary Brazilian cooking, and reimagined Northeastern dishes. For François, food is a way to tell stories, evoke emotion, and bring people together.

His cuisine marries tradition with innovation — from sacred street food reimagined for fine dining, to signature creations that make every event unforgettable.

Favourites

One of François’s proudest creations is the “bolinho de obá” — a croquette made from yam dough and filled with creamy caruru, peanuts, and cashews. Inspired by a traditional Afro-Brazilian offering, the dish pays tribute to acarajé but in a lighter, modern format. It’s a crowd favorite, especially with children, and perfectly reflects his mission: to feed both body and soul.
